Crispy Prosciutto-Wrapped Asparagus

This spring-time dish is elegant, yet super simple, excellent as either an appetizer or a side dish.

•34 medium asparagus spears, ends trimmed
•1 tbsp olive oil
•Kosher salt
•Freshly ground black pepper
•17 thin slices prosciutto, cut in half lengthwise (about 7 ounces)


•Turn your oven on to broil.

•Lay out asparagus onto a baking sheet and drizzle with the olive oil, and sprinkle with salt and pepper. Toss until the spears are evenly coated.

•Transfer them to the large plate and set the baking sheet aside.Starting just below the top of the spear, begin to wrap prosciutto down spear until covered. Repeat with the rest of your asparagus, and space out on baking sheet so that none of your spears are touching. This will prevent your prosciutto from getting cripsy!

•Broil for 3 minutes, remove baking sheet from the oven, and flip asparagus. Return the baking sheet to the oven and continue to broil until prosciutto is crisped and browned, about 3 more minutes.
