Healthy Zucchini Muffins

Prep time 10 minutes | Cooking time 20 minutes

Makes 12 muffins.

These muffins are a delicious way to excite the kids about eating vegetables. They make a perfect addition to any lunch box, or are great for breakfast. Freeze any leftovers and simply pull out the night before to thaw and pack with lunch the next morning!



•3 cups whole-wheat flour
•1 tbsp cinnamon
•1 1/2  tsp baking soda
•1/4 tsp baking powder
•1/2 tsp salt
•3 eggs
•3/4 cup oil (coconut oil is a good option)
•1/2 cup honey
•1 tsp vanilla
•3 cups grated zucchini


•Preheat oven to 325 degrees F.

•Mix all dry ingredients.

•Make a well in center of and pour liquids into the well. Stir until just mixed, careful not to overmix.

•Fold in zucchini.

•Pour batter into greased or lined muffin pan and bake until a toothpick comes clean in the center of muffins, about 15 - 20 minutes.
